Tocane
St-Apre is a small town in the French département (state)
of Dordogne. Dordogne is part of the larger Périgord region in
the southwest. The main towns in the area are Ribérac to the west
and Périgueux to the east. Tocane is pretty much halfway between
Bordeaux and Limoges.
Dordogne is a French center for a number of things that Americans associate
with France: pâté de fois gras, duck, and truffles. They
also do a lot with noix (walnuts), even liqueur.
The
goose or duck liver that goes into pâtés comes from birds
that have been force-fed on corn. Apparently you can take a tour and witness
this first-hand, but why would you want to? If pâté is tasting
a bit plain to you, you can get a can of it infused with truffles. It
doesn't get much more French than that.
